The three things that actually go wrong

Thaw time. A turkey needs roughly twenty-four hours in the fridge for every four to five pounds, which puts a sixteen-pounder at four full days. A frozen bird discovered on Wednesday afternoon cannot be rescued, and this is the single most common way Thanksgiving goes sideways.

Fridge space. That thawing turkey occupies an entire shelf for the better part of a week, at the same time as the make-ahead dishes need somewhere to live. Clear it a week out, and put the drinks in a cooler rather than the fridge.

Oven space. One oven, one turkey, and four sides that all want to be hot at once. The answer is that the turkey has to rest for thirty minutes anyway, and that half hour is when the sides go in. Page two has a fill-in grid for working out what goes where.

Everything else is just doing things earlier than feels necessary.

Victorinox Fibrox Pro 8-Inch Chef's Knife

For the Tuesday, when all the chopping happens

Two days out is onions, celery, carrots and bread, which is more continuous knife work than most home kitchens do in a month. This is the knife professional kitchens buy by the case: light, grippy when wet, and sharp enough that the work stops being a fight. It is also a fraction of the price of the knives it outperforms, and the handle is plain plastic, which is exactly why.

Lodge Essential Enamel Cast Iron Dutch Oven, 6 qt

For the make-ahead sides, and the stock

The make-ahead pot. Stock on the Monday, braised greens or beans on the Tuesday, stovetop to oven to table without changing dishes, and it holds heat long enough that whatever is in it is still hot when the turkey finally comes out. Enamel means no seasoning to maintain and no reaction with tomatoes or wine.

Amazon Basics Enameled Cast Iron Dutch Oven

The same job for less money

Honest comparison: this does most of what the Lodge does, at a lower price and with a great many more reviews behind it. The enamel is less refined and the lid is heavier than it needs to be. If you already own a heavy pot, you do not need either of these. If you own none, this is the one to start with.

    Salt, Fat, Acid, Heat

For the cook who wants next year to be easier

Not a Thanksgiving book, which is the point. It explains why a recipe works rather than handing you another one to follow, and the salting chapter alone will change what you do to a turkey the day before. Also the safest gift on this page for the person hosting, since it assumes nothing about their kitchen.

The thermometer decides, not the clock

165°F in the thickest part of the thigh without touching bone, and check the breast too. Start checking an hour before you expect it to be done, because ovens lie and no two birds cook the same. Then let it rest for thirty minutes, which is not a suggestion: carving straight out of the oven costs you the juice and the oven space you need for everything else.
